Instructions

  1. Prepare the Potatoes: Wash the potatoes and cut them into small cubes or wedges. Toss them in 1 tablespoon of vegetable oil and season with salt.
  2. Roast the Potatoes: Preheat the oven to 425°F (220°C). Spread the potatoes in a single layer on a baking sheet and roast for 25–30 minutes, flipping halfway through until golden and crispy.
  3. Prepare the Sauce: In a saucepan, combine soy sauce, sesame oil, gochujang, honey, garlic, ginger, and rice vinegar. Stir over medium heat until the sauce is warm and the sugar dissolves. Simmer for 2–3 minutes.
  4. Toss the Potatoes: Once the potatoes are roasted, transfer them to a bowl and pour the warm sauce over them. Toss gently to coat the potatoes evenly.
