- 1/4 teaspoon pepper, to taste
- Olive oil or avocado oil, for frying
Instructions
- Peel and slice the onion into thick rings, ensuring they are about 1/2 inch thick. Separate the individual rings carefully and set them aside.
- In one shallow bowl, whisk the eggs. In another bowl, combine the almond flour, Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper. Mix the dry ingredients until well combined.
- Dip each onion ring first into the egg mixture, ensuring it is fully coated. Then, dip the coated onion ring into the almond flour mixture, pressing gently to ensure it sticks evenly. Repeat with the rest of the onion rings.
- In a large skillet, heat about 1/2 inch of oil over medium heat. The oil should be hot enough to sizzle when you add the onion rings, but not smoking. Test the temperature by dropping a small piece of the coating into the oil—if it bubbles and fries, it’s ready.
- Carefully add the coated onion rings to the hot oil, making sure not to overcrowd the pan. Fry for about 2-3 minutes per side, or until golden brown and crispy. Use tongs to flip the rings and ensure they cook evenly.
- Once the onion rings are golden and crispy, remove them from the oil and place them on a plate lined with paper towels to drain excess oil. Serve immediately with your favorite dipping sauce, such as ranch or sugar-free ketchup.
