There’s something irresistibly satisfying about biting into a crispy, golden potato stick oozing with melted cheese.
Ingredients
- 2 cups mashed potatoes (cold, preferably from leftover potatoes)
- 1½ cups shredded cheese (cheddar, mozzarella, or a Hungarian blend like Trappista)
- 1 egg
- 2 tbsp sour cream
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp garlic powder (optional)
- ¾ cup all-purpose flour (plus more for rolling)
- 1 cup breadcrumbs
- 2 eggs (for coating)
- Oil for frying (sunflower or vegetable)
Instructions
1. Make the Potato Mixture
In a large mixing bowl, combine the mashed potatoes, shredded cheese, 1 egg, sour cream, salt, pepper, and garlic powder. Stir until a sticky but shapeable dough forms. If it’s too loose, add a bit of flour.
2. Shape the Sticks
On a floured surface, roll the dough into a rectangle about ½ inch thick. Use a sharp knife to cut into sticks about ¾ inch wide and 3–4 inches long. Place on a tray and chill in the fridge for at least 30 minutes.
3. Set Up Breading Station
Place flour in one shallow bowl, beat 2 eggs in another, and place breadcrumbs in a third.
4. Bread the Sticks
Coat each stick in flour, then dip in egg, and roll in breadcrumbs. For extra crunch, repeat the egg and breadcrumb step for a double coating.
5. Fry Until Golden
Heat 2 inches of oil in a deep pan to 350°F (175°C). Fry sticks in batches until golden brown, about 2–3 minutes per side. Remove and drain on paper towels.
6. Serve
Serve hot with your favorite dips: sour cream with chives, garlic mayo, or spicy paprika aioli.
Notes
Use firm, cold mashed potatoes for best shaping.
Double coat for crispiness that lasts longer.
Freeze before frying if you want to prep ahead.
Avoid overfilling with cheese to prevent leaks during frying.
