Instructions
In a large bowl, whisk together olive oil, lemon juice, zest, garlic, and seasonings. Add chicken tenderloins and toss to coat. Let marinate for 15–30 minutes (or overnight in the fridge for deeper flavor).
In a shallow dish, combine almond flour or breadcrumbs with Parmesan cheese (if using) and dried herbs. Mix well.
Remove chicken from the marinade and gently shake off excess liquid. Dredge each tender in the coating mixture, pressing lightly to help it stick.
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Arrange chicken tenders in a single layer and bake for 18–20 minutes, flipping halfway through.
Preheat air fryer to 375°F. Place tenders in a single layer in the basket. Air fry for 10–12 minutes, flipping halfway through, until golden and cooked through.
