- 6 large russet potatoes, scrubbed clean
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For the Garlic Herb Butter:
- 3 tablespoons unsalted butter, melted
- 3 cloves garlic, finely minced
- 1 teaspoon dried parsley
- 1/2 teaspoon dried thyme or rosemary
- 1/4 teaspoon paprika (optional)
- 2 tablespoons grated Parmesan cheese (optional)
Instructions
- Preheat oven: Heat oven to 400°F (200°C). Scrub potatoes clean, dry them well, and rub with olive oil and salt. Bake directly on oven rack for 50–60 minutes until fork-tender. Let cool slightly.
- Scoop out potatoes: Cut baked potatoes in half lengthwise and scoop out flesh, leaving about 1/4 inch of potato attached to the skin.
- Prepare garlic butter: In a small bowl, mix melted butter, minced garlic, parsley, thyme, paprika, and Parmesan (if using).
- Season and roast: Brush the skins (inside and out) with garlic butter. Arrange on parchment-lined baking sheet and roast for 10 minutes. Flip and roast another 5–8 minutes until golden and crisp.
- Finish and serve: Garnish with parsley and extra Parmesan. Serve hot with sour cream, aioli, or chive yogurt dip.
