  • Diet: Vegetarian

Description

These Creepy Eyeball Deviled Eggs are the ultimate spooky Halloween snacks! Perfect for parties, potlucks, or family fun, they’re easy to make, budget-friendly, and delightfully creepy. With black olive “pupils,” red “veins,” and eerie-colored yolk filling, they’re guaranteed to wow your guests while delivering the savory flavor of classic deviled eggs.

Ingredients

Scale

For the Deviled Eggs:

  • 6 large eggs
  • 2 tablespoons mayonnaise
  • 1 teaspoon yellow mustard
  • Salt and pepper, to taste

For the Eyeball Decoration:

  • Black olives, sliced into rings for pupils
  • Ketchup or red gel food coloring for veins
  • Green or blue food coloring (optional, for yolk tint)

Instructions

  1. Boil eggs: Place eggs in a saucepan, cover with water, and bring to a boil. Remove from heat, cover, and let sit 10–12 minutes. Cool in an ice bath before peeling.
  2. Slice and scoop: Cut eggs in half lengthwise and remove yolks into a bowl.
  3. Prepare filling: Mash yolks with mayonnaise, mustard, salt, and pepper until smooth. Add a drop of green or blue food coloring if desired.
  4. Pipe filling: Spoon or pipe mixture back into egg whites.
  5. Create pupils: Top each filled egg with a black olive slice in the center.
  6. Add veins: Use a toothpick dipped in ketchup or red food coloring to draw “veins” outward for a bloodshot look.
  7. Chill and serve: Refrigerate at least 30 minutes before serving.

Notes

  • For a spookier effect, tint the yolk mixture green or blue.
  • Use red gel food coloring for more vivid “bloodshot” veins.
  • Make dairy-free by swapping mayo for mashed avocado or hummus.
  • Prep ahead: Store egg whites and yolk filling separately, then assemble before serving.
  • Best eaten the same day but can be stored up to 2 days in the fridge.
