- 1 pound gnocchi (shelf-stable or fresh)
- 1 teaspoon Italian seasoning
- 1/4 teaspoon red pepper flakes (optional)
- Salt and black pepper, to taste
- Fresh basil, for garnish
- Optional: spinach, kale, shredded chicken, grated Parmesan
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and sauté 5–7 minutes until softened.
- Stir in garlic and cook 1 minute until fragrant.
- Add tomato paste and cook 1–2 minutes to deepen flavor.
- Stir in crushed tomatoes, broth, Italian seasoning, salt, pepper, and red pepper flakes.
- Simmer uncovered for 10 minutes.
- Blend soup until smooth using an immersion blender.
- Lower heat and stir in heavy cream.
- Add gnocchi and cook 3–4 minutes until tender.
- Taste, adjust seasoning, and garnish with fresh basil before serving.
