Description

This luxurious and creamy pumpkin gnocchi is the ultimate fall comfort food. Tender potato gnocchi coated in a silky pumpkin sauce with Parmesan and a hint of nutmeg — ready in under 30 minutes and perfect for cozy dinners.

Ingredients

Scale

For the Gnocchi:

  • 1 pound store-bought potato gnocchi (or homemade)

For the Creamy Pumpkin Sauce:

  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 1 cup heavy cream (or half-and-half for lighter version)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ⅛ teaspoon nutmeg
  • ½ cup grated Parmesan cheese
  • Chopped parsley, for garnish

Instructions

  1. Cook the Gnocchi: Bring a pot of salted water to a boil. Add gnocchi and cook according to package instructions, usually 2–3 minutes, until they float to the top. Drain and set aside.
  2. Make the Creamy Pumpkin Sauce: In a large skillet over medium heat, melt the butter. Add garlic and sauté for 1 minute until fragrant. Stir in pumpkin puree, heavy cream, salt, pepper, and nutmeg. Simmer for 3–5 minutes until slightly thickened.
  3. Add Gnocchi to the Sauce: Stir in the cooked gnocchi and toss to coat. Cook for another 1–2 minutes.
  4. Add Parmesan and Garnish: Remove from heat, stir in Parmesan cheese, and sprinkle with parsley. Serve hot and enjoy!

Notes

  • Use pure pumpkin puree — avoid pumpkin pie filling.
  • Don’t overcook gnocchi; they should be soft but not mushy.
  • For vegetarian: ensure Parmesan is rennet-free.
  • Add sautéed mushrooms, spinach, or Italian sausage for variations.
  • Store leftovers in an airtight container in the fridge up to 3 days. Reheat gently with a splash of cream.
