For the Gnocchi:
- 1 pound store-bought potato gnocchi (or homemade)
For the Creamy Pumpkin Sauce:
- 2 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1 cup pumpkin puree (not pumpkin pie filling)
- 1 cup heavy cream (or half-and-half for lighter version)
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ⅛ teaspoon nutmeg
- ½ cup grated Parmesan cheese
- Chopped parsley, for garnish
Instructions
- Cook the Gnocchi: Bring a pot of salted water to a boil. Add gnocchi and cook according to package instructions, usually 2–3 minutes, until they float to the top. Drain and set aside.
- Make the Creamy Pumpkin Sauce: In a large skillet over medium heat, melt the butter. Add garlic and sauté for 1 minute until fragrant. Stir in pumpkin puree, heavy cream, salt, pepper, and nutmeg. Simmer for 3–5 minutes until slightly thickened.
- Add Gnocchi to the Sauce: Stir in the cooked gnocchi and toss to coat. Cook for another 1–2 minutes.
- Add Parmesan and Garnish: Remove from heat, stir in Parmesan cheese, and sprinkle with parsley. Serve hot and enjoy!
Notes
- Use pure pumpkin puree — avoid pumpkin pie filling.
- Don’t overcook gnocchi; they should be soft but not mushy.
- For vegetarian: ensure Parmesan is rennet-free.
