Instructions

  1. Sauté aromatics: Heat olive oil in a large pot. Cook onions 5–6 minutes until translucent.
  2. Cook mushrooms: Add mushrooms, sauté 10–12 minutes until tender and browned.
  3. Add flavors: Stir in garlic, thyme, rosemary, tamari, and balsamic. Cook 2 minutes.
  4. Simmer: Pour in broth, bring to a gentle boil, then reduce heat. Simmer 10 minutes.
  5. Blend: Add cashews. Blend with immersion blender (or transfer to a blender) until smooth.
  6. Finish: Season with salt and pepper. Garnish with parsley or sautéed mushrooms. Serve warm.
