- ½ cup (120ml) dry white wine or water

Instructions
- Warm the Broth: Heat vegetable broth in a saucepan over low heat and keep it warm.
- Sauté Vegetables: In a large pan, heat olive oil over medium heat. Cook onion 3–4 minutes, add garlic for 30 seconds, then add mushrooms and sauté 6–8 minutes until browned.
- Toast the Rice: Stir in arborio rice and toast for 1–2 minutes until translucent at edges.
- Deglaze: Pour in white wine and stir until absorbed.
- Add Broth Gradually: Add warm broth one ladle at a time, stirring often and allowing absorption before adding more. Continue for 20–25 minutes until rice is al dente and creamy.
- Finish and Serve: Stir in Parmesan (if using), season with salt and pepper, and garnish with parsley. Serve immediately.
Notes
- Risotto creaminess comes from arborio rice starch, not added cream.
- Keep broth warm to speed absorption.
- For vegan risotto, replace Parmesan with nutritional yeast.
