For the Shrimp:

  • 1 lb large shrimp, peeled and deveined (450g)
  • 1 tablespoon olive oil (15ml)
  • 1 teaspoon jerk seasoning
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • Salt and pepper, to taste

For the Pasta & Sauce:

  • 8 oz fettuccine or linguine (225g)
  • 2 tablespoons unsalted butter (30g)
  • 3 cloves garlic, minced
  • 1 teaspoon jerk seasoning
  • ½ teaspoon red pepper flakes (optional, for extra spice)
  • 1 ½ cups heavy cream (360ml)
  • ½ cup grated Parmesan cheese (50g)
  • 1 cup chopped kale (or spinach)
  • Juice of ½ a lime
  • Fresh parsley, for garnish

Instructions

Step 1: Cook the Pasta

  1. Bring a large pot of salted water to a boil.
  2. Cook the pasta according to package instructions until al dente. Drain and set aside, reserving ½ cup of pasta water for the sauce.

Step 2: Season and Cook the Shrimp

  1. Pat shrimp dry with a paper towel and season with jerk seasoning, smoked paprika, garlic powder, salt, and pepper.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add shrimp and cook for 2-3 minutes per side, until pink and opaque. Remove from the skillet and set aside.

Step 3: Make the Creamy Jerk Sauce

  1. In the same skillet, melt butter over medium heat.
  2. Add garlic, jerk seasoning, and red pepper flakes, sautéing for 30 seconds until fragrant.
  3. Pour in heavy cream, stirring constantly. Let it simmer for 3-4 minutes to thicken.
  4. Stir in Parmesan cheese, allowing it to melt into the sauce.

Step 4: Combine Everything

  1. Add chopped kale to the sauce and cook for 1-2 minutes until wilted.
  2. Return the cooked shrimp to the skillet and toss to coat in the sauce.
  3. Add the drained pasta and toss everything together, adding a splash of reserved pasta water if needed to loosen the sauce.
  4. Squeeze fresh lime juice over the top and stir.

Step 5: Serve and Garnish

  1. Divide the pasta into serving bowls.
  2. Garnish with fresh parsley and extra Parmesan cheese.
  3. Serve immediately and enjoy!

    • Use Fresh Shrimp: Fresh or high-quality frozen shrimp will give the best flavor.
