- 1 tablespoon olive oil (15ml)
- 1 teaspoon jerk seasoning
- ½ teaspoon smoked paprika
- ½ teaspoon garlic powder
- Salt and pepper, to taste
For the Pasta & Sauce:
- 8 oz fettuccine or linguine (225g)
- 2 tablespoons unsalted butter (30g)
- 3 cloves garlic, minced
- 1 teaspoon jerk seasoning
- ½ teaspoon red pepper flakes (optional, for extra spice)
- 1 ½ cups heavy cream (360ml)
- ½ cup grated Parmesan cheese (50g)
- 1 cup chopped kale (or spinach)
- Juice of ½ a lime
- Fresh parsley, for garnish
Step 1: Cook the Pasta
- Bring a large pot of salted water to a boil.
- Cook the pasta according to package instructions until al dente. Drain and set aside, reserving ½ cup of pasta water for the sauce.
Step 2: Season and Cook the Shrimp
- Pat shrimp dry with a paper towel and season with jerk seasoning, smoked paprika, garlic powder, salt, and pepper.
- Heat olive oil in a large skillet over medium heat.
- Add shrimp and cook for 2-3 minutes per side, until pink and opaque. Remove from the skillet and set aside.
Step 3: Make the Creamy Jerk Sauce
- In the same skillet, melt butter over medium heat.
- Add garlic, jerk seasoning, and red pepper flakes, sautéing for 30 seconds until fragrant.
- Pour in heavy cream, stirring constantly. Let it simmer for 3-4 minutes to thicken.
- Stir in Parmesan cheese, allowing it to melt into the sauce.
Step 4: Combine Everything
- Add chopped kale to the sauce and cook for 1-2 minutes until wilted.
- Return the cooked shrimp to the skillet and toss to coat in the sauce.
- Add the drained pasta and toss everything together, adding a splash of reserved pasta water if needed to loosen the sauce.
- Squeeze fresh lime juice over the top and stir.
Step 5: Serve and Garnish
- Divide the pasta into serving bowls.
- Garnish with fresh parsley and extra Parmesan cheese.
- Serve immediately and enjoy!
Notes
- Use Fresh Shrimp: Fresh or high-quality frozen shrimp will give the best flavor.
- Don’t Overcook the Shrimp: They should be just pink and opaque—overcooking makes them rubbery.
- Adjust the Spice: Add more or less jerk seasoning and red pepper flakes to suit your taste.
