Ingredients
For the Cake
- 1 cup (2 sticks) unsalted butter
- 1 ½ cups chopped pecans
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- ½ teaspoon salt
- 1 ½ cups granulated sugar
- 4 large eggs
- 1 cup whole milk (room temperature)
- 1 tablespoon vanilla extract
For the Frosting
- ½ cup unsalted butter, softened
- 8 oz cream cheese, softened
- 3 cups powdered sugar
- 2 tablespoons milk
- 1 teaspoon vanilla extract
Optional Toppings
- Extra chopped toasted pecans
- Caramel drizzle
- A dusting of cinnamon or nutmeg
Instructions
In a skillet over medium heat, melt 1 tablespoon of butter and add the chopped pecans. Stir frequently for 5–7 minutes until they’re golden and aromatic. Remove from heat and let cool.
In a saucepan, melt the remaining butter over medium heat. Continue to cook, swirling occasionally, until the butter turns golden brown and releases a nutty aroma. Remove from heat and cool slightly.
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan and line it with parchment paper or lightly flour it.
In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
In a large mixing bowl, beat the eggs and sugar until light and fluffy, about 3–4 minutes using an electric mixer.
Slowly mix in the browned butter, followed by the milk and vanilla extract.
Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the toasted pecans.
Pour the batter into the prepared baking pan and spread evenly. Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean. Let cool completely before frosting.
Beat together the softened butter and cream cheese until smooth. Add powdered sugar, vanilla, and milk, and beat until fluffy.
Spread the frosting over the cooled cake. Sprinkle with extra pecans or drizzle with caramel if desired.
Notes
- Brown the butter properly for rich flavor—don’t rush the process.
- Use room-temperature ingredients so they blend easily and evenly.
- Toast the pecans before adding to the batter for maximum aroma and crunch.
