Base Ingredients:
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 tablespoon all-purpose flour (for thickening)
- 1 cup heavy cream
- ¾ cup freshly grated Parmesan cheese
- Salt and black pepper, to taste
Optional Additions:
- ¼ teaspoon red pepper flakes for heat
- 1 teaspoon Italian seasoning or dried parsley
- 1 tablespoon cream cheese for extra silkiness
- Splash of milk to thin if needed
Instructions
In a medium saucepan, melt the butter over medium heat. Add the minced garlic and sauté for 1–2 minutes, until fragrant. Be careful not to brown the garlic—it should remain light and aromatic.
Whisk in the flour to form a roux. Cook, stirring constantly, for about 1 minute to eliminate the raw flour taste. This base helps thicken the sauce later.
Slowly whisk in the heavy cream, continuing to stir so no lumps form. Bring the mixture to a gentle simmer and cook for 3–4 minutes until slightly thickened.
Lower the heat and stir in the grated Parmesan. Keep whisking until the cheese has fully melted and the sauce is smooth and creamy.
Add salt and pepper to taste. Optional: sprinkle in red pepper flakes or herbs for extra flavor. Serve immediately over hot pasta or store for later.
