Description
There’s nothing quite like biting into a golden, crispy grilled cheese sandwich — except when it’s filled with creamy, buttery avocado.
Ingredients
- 4 slices of sourdough, multigrain, or bread of choice
- 1 ripe avocado, mashed
- 1 teaspoon lemon juice (to keep avocado fresh)
- ¼ teaspoon garlic powder (optional)
- Pinch of salt and pepper, to taste
- 4 slices of cheese (cheddar, mozzarella, provolone, or a mix)
- 2 tablespoons butter, softened (or vegan butter)
Optional Add-ins:
- Tomato slices
- Fresh basil
- Baby spinach
- Red pepper flakes
- Everything bagel seasoning
Instructions
Step 1: Mash the Avocado
In a small bowl, mash the avocado with lemon juice, garlic powder (if using), salt, and pepper until smooth or slightly chunky — your choice!
Step 2: Butter the Bread
Spread softened butter on one side of each bread slice. This side will be face-down in the skillet.
Step 3: Layer the Sandwich
On the non-buttered side of two bread slices, add a slice of cheese, then spread a layer of mashed avocado on top. Add a second slice of cheese over the avocado, then top with the remaining bread slices, buttered side facing out.
Step 4: Grill the Sandwiches
Heat a nonstick skillet over medium-low heat. Place the sandwiches in the skillet and cook for 3–4 minutes per side, or until the bread is golden brown and the cheese is fully melted.
Step 5: Slice and Serve
Remove from the skillet, let cool slightly, and slice in half. Serve immediately with your favorite sides or dips.
Notes
- Use ripe avocados – they should yield slightly to gentle pressure
- Don’t overload the sandwich – too much avocado can make it hard to crisp
- Butter the bread evenly – this ensures golden, crispy results
