  • 1 large ripe avocado (pitted and peeled)
  • 2 garlic cloves
  • 2 tablespoons fresh lemon juice
  • ¼ cup fresh basil leaves
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper, to taste
  • 24 tablespoons water (to adjust sauce consistency)
  • Optional toppings: cherry tomatoes, pine nuts, red pepper flakes, or fresh basil

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Add the fusilli and cook according to the package instructions until al dente. Drain and reserve a small amount of pasta water if needed.
  2. Prepare the sauce: While the pasta cooks, add the avocado, garlic, lemon juice, olive oil, basil, salt, and pepper to a blender or food processor. Blend until smooth, scraping down the sides as needed.
  3. Adjust consistency: Add 2–4 tablespoons of water to the sauce and blend again until your desired creaminess is reached.
  4. Combine pasta and sauce: Place the drained pasta in a large bowl. Pour the avocado sauce over the pasta and toss to coat evenly.
  5. Serve immediately: Garnish with cherry tomatoes, pine nuts, or extra basil if desired. Serve warm or at room temperature.

Notes

Use a ripe avocado it should yield slightly to pressure but not be mushy
Add water gradually this helps you control the thickness of the sauce
Serve immediately the avocado sauce is best enjoyed fresh to maintain color and flavor
Season well don’t skip the salt and lemon they brighten the flavor
Use high quality olive oil for extra richness and depth
