Growing up, nothing said “summer” quite like the sweet, creamy, citrusy swirl of a creamsicle popsicle. Inspired by those nostalgic flavors, these Creamsicle Orange Cookies capture that same bright, sunny taste in a soft, chewy cookie form.
Ingredients
- 2 1/2 cups (315g) all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup (230g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 1/2 cup (100g) packed light brown sugar
- 2 large eggs
- 2 teaspoons pure vanilla extract
- 2 tablespoons fresh orange zest (about 2 medium oranges)
- 2 tablespoons fresh orange juice
- 1 cup white chocolate chips (or vanilla baking chips)
Instructions
In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
In a large bowl, using an electric mixer, cream the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2–3 minutes.
Beat in the eggs one at a time. Add the vanilla extract, orange zest, and orange juice. Mix until combined.
Gradually add the dry ingredients into the wet ingredients. Mix just until incorporated.
Fold in the white chocolate chips.
Preheat your oven to 175°C (350°F).
Line a baking sheet with parchment paper.
Using a cookie scoop or tablespoon, drop dough onto the prepared sheet about 2 inches apart.
Bake for 9–11 minutes, or until the edges are set and the centers are still slightly soft.
Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- Use freshly grated orange zest for the brightest flavor.
- Don’t overbake — the centers should look slightly underdone when you pull them from the oven. They will firm up as they cool.
- Chill the dough for 30 minutes if you prefer a thicker cookie.
