Description

Growing up, nothing said “summer” quite like the sweet, creamy, citrusy swirl of a creamsicle popsicle. Inspired by those nostalgic flavors, these Creamsicle Orange Cookies capture that same bright, sunny taste in a soft, chewy cookie form.

  • 2 1/2 cups (315g) all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (230g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) packed light brown sugar
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 2 tablespoons fresh orange zest (about 2 medium oranges)
  • 2 tablespoons fresh orange juice
  • 1 cup white chocolate chips (or vanilla baking chips)

Instructions

Step 1: Prepare the Dry Ingredients

In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.

Step 2: Cream the Butter and Sugars

In a large bowl, using an electric mixer, cream the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2–3 minutes.

Step 3: Add Flavor

Beat in the eggs one at a time. Add the vanilla extract, orange zest, and orange juice. Mix until combined.

Step 4: Combine and Add Chips

Gradually add the dry ingredients into the wet ingredients. Mix just until incorporated.
Fold in the white chocolate chips.

Step 5: Scoop and Bake

Preheat your oven to 175°C (350°F).
Line a baking sheet with parchment paper.
Using a cookie scoop or tablespoon, drop dough onto the prepared sheet about 2 inches apart.
Bake for 9–11 minutes, or until the edges are set and the centers are still slightly soft.
Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • Use freshly grated orange zest for the brightest flavor.
  • Don’t overbake — the centers should look slightly underdone when you pull them from the oven. They will firm up as they cool.
  • Chill the dough for 30 minutes if you prefer a thicker cookie.
