Ingredients
For the pumpkin bread: 1 ¾ cups (220 g) all-purpose flour 1 teaspoon baking soda ½ teaspoon baking powder ½ teaspoon salt 1 teaspoon ground cinnamon ½ teaspoon ground nutmeg ½ teaspoon ground ginger 1 cup (200 g) granulated sugar ½ cup (100 g) packed brown sugar ½ cup (120 ml) vegetable oil 2 large eggs 1 cup (240 g) pumpkin puree ¼ cup (60 ml) milk 1 teaspoon vanilla extract For the cream cheese filling: 8 oz (225 g) cream cheese, softened ¼ cup (50 g) granulated sugar 1 large egg ½ teaspoon vanilla extract
Instructions
1. Preheat oven to 350°F (175°C). Grease and line a 9×5 inch loaf pan with parchment paper. 2. In a medium bowl, whisk together flour, baking soda, baking powder, salt, and spices. 3. In a large bowl, whisk sugars, oil, eggs, pumpkin puree, milk, and vanilla until smooth. Fold in dry ingredients until just combined. 4. In another bowl, beat cream cheese, sugar, egg, and vanilla until creamy and smooth. 5. Pour half the pumpkin batter into the prepared pan. Spread cream cheese filling evenly over it. Top with remaining pumpkin batter and smooth the top. 6. Bake for 50–60 minutes, or until a toothpick inserted in the bread (avoiding cream cheese) comes out clean. 7. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
