These Cranberry Apple Twice-Baked Sweet Potatoes are the ultimate fall comfort dish. - 2 medium apples (Granny Smith or Honeycrisp), peeled, cored, and diced
- 1/2 cup dried cranberries

- 2 tablespoons maple syrup (or honey)
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped pecans or walnuts (optional, for crunch)
Instructions
- Bake Potatoes: Preheat oven to 400°F (200°C). Pierce sweet potatoes with a fork, place on a baking sheet, and bake 45–50 minutes until fork-tender.
- Prepare Filling: While baking, sauté diced apples in butter for 5–6 minutes until softened. Stir in cranberries, maple syrup, cinnamon, nutmeg, salt, and pepper.
- Scoop & Mash: Let baked potatoes cool slightly. Cut in half lengthwise and scoop out the insides, leaving skins intact. Mash potato flesh with apple-cranberry mixture until creamy.
- Refill Skins: Spoon mixture back into sweet potato shells. Sprinkle with chopped nuts if using.
- Bake Again: Return filled potatoes to the oven and bake another 10–15 minutes until hot and lightly golden on top. Serve warm.
