  • Author: Lyndy
  • Total Time: 80 minutes
  • Yield: 4 servings 1x

Description

These Cranberry Apple Twice-Baked Sweet Potatoes are the ultimate fall comfort dish. Creamy roasted sweet potatoes are blended with sautéed apples, tart cranberries, warm spices, and a touch of maple syrup, then baked again for a festive and hearty side. Perfect for Thanksgiving, Christmas, or cozy autumn dinners, this dish is naturally gluten-free, wholesome, and full of seasonal flavor.

Ingredients

Scale
  • 4 medium sweet potatoes (about 2 pounds)
  • 2 medium apples (Granny Smith or Honeycrisp), peeled, cored, and diced
  • 1/2 cup dried cranberries
  • 2 tablespoons unsalted butter (or coconut oil for dairy-free)
  • 2 tablespoons maple syrup (or honey)
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped pecans or walnuts (optional, for crunch)

Instructions

  1. Bake Potatoes: Preheat oven to 400°F (200°C). Pierce sweet potatoes with a fork, place on a baking sheet, and bake 45–50 minutes until fork-tender.
  2. Prepare Filling: While baking, sauté diced apples in butter for 5–6 minutes until softened. Stir in cranberries, maple syrup, cinnamon, nutmeg, salt, and pepper.
  3. Scoop & Mash: Let baked potatoes cool slightly. Cut in half lengthwise and scoop out the insides, leaving skins intact. Mash potato flesh with apple-cranberry mixture until creamy.
  4. Refill Skins: Spoon mixture back into sweet potato shells. Sprinkle with chopped nuts if using.
  5. Bake Again: Return filled potatoes to the oven and bake another 10–15 minutes until hot and lightly golden on top. Serve warm.

Notes

  • Use firm, tart apples like Granny Smith for best texture.
  • Don’t over-scoop potato skins or they may collapse.
  • Add nuts for crunch or skip for a nut-free version.
  • Make ahead by baking and stuffing the day before, then re-baking before serving.
  • Easily adaptable to vegan or Weight Watchers fall recipes by swapping butter for coconut oil and maple syrup for sugar-free sweetener.
