- For the Couscous Salad:
- 1 cup couscous (Moroccan or pearl)
- 1 1/4 cups water or vegetable broth
- 1/4 cup extra virgin olive oil
- 1/2 teaspoon salt
- 1 garlic clove, minced
- 1/2 teaspoon lemon zest
- 1 tablespoon fresh lemon juice
- 1/2 cup chopped cucumber
- 1/2 cup cherry tomatoes, halved
- 1/4 cup finely chopped red onion
- 1/4 cup chopped parsley
- 2 tablespoons chopped fresh mint
- 1/4 cup crumbled feta cheese (optional)
Instructions
- Bring water or broth to a boil in a saucepan. Stir in couscous, cover, and remove from heat. Let sit for 5–10 minutes, depending on type. Fluff with a fork and let cool.
- In a small bowl, whisk olive oil, lemon juice, lemon zest, garlic, and salt to make the dressing.
- Dice cucumber, halve tomatoes, and finely chop red onion, parsley, and mint.
- In a large bowl, combine cooled couscous with vegetables and herbs. Pour over dressing and toss to combine.
- Top with crumbled feta before serving, or leave it out for a vegan version.
