  • 1 ½ pounds baby red potatoes, quartered
  • 1 pound fresh green beans, trimmed
  • 6 slices thick-cut bacon, chopped
  • 1 packet ranch seasoning mix (or 2 tablespoons homemade)
  • 2 tablespoons olive oil or bacon grease
  • Salt and black pepper, to taste
  • Optional: ½ teaspoon red pepper flakes for heat
  • Optional garnish: chopped parsley or shredded cheddar cheese

Instructions

Step 1: Cook the Bacon
In a large skillet over medium heat, cook chopped bacon until crispy. Remove with a slotted spoon and set aside. Leave about 1–2 tablespoons of the bacon grease in the skillet for flavor.

Step 2: Cook the Potatoes
Add quartered potatoes to the skillet with olive oil or leftover bacon grease. Season with salt and pepper. Cover and cook for about 10–12 minutes, stirring occasionally, until golden and fork-tender.

Step 3: Add Green Beans
Add trimmed green beans to the skillet. Cover and steam for about 6–8 minutes, or until the green beans are just tender but still vibrant in color.

Step 4: Season and Toss
Sprinkle ranch seasoning over the potatoes and green beans. Toss everything together to coat. Add bacon back to the skillet and cook uncovered for another 3–5 minutes, letting the flavors combine.

Step 5: Garnish and Serve
Serve warm, topped with fresh parsley or shredded cheese if desired. Enjoy!
