Description
If you’re looking for a soft, pillowy bread that feels like you’re biting into a cloud — with a burst of juicy blueberries — then you’re going to fall in love with Cottage Cheese Blueberry Cloud Bread.
Ingredients
- ½ cup cottage cheese (full-fat preferred)
- 3 large eggs, separated
- 2 tablespoons sugar or sweetener of choice
- 1 teaspoon vanilla extract
- ¼ teaspoon cream of tartar
- ½ cup fresh blueberries
- Optional: 1 tablespoon almond flour (for added structure)
- Optional topping: powdered sugar dusting
Instructions
Preheat oven to 300°F (150°C).
Line a baking sheet with parchment paper.
Carefully separate egg whites into one bowl and yolks into another.
Ensure no yolk gets into the whites for perfect whipping.
Add cream of tartar to the egg whites.
Beat on high speed until stiff peaks form.
Tip: Properly whipped egg whites are key to that signature cloud texture!
In the bowl with the yolks, add cottage cheese, sugar, and vanilla extract.
Blend until smooth and creamy.
If desired, stir in almond flour for a bit more structure.
Gently fold the whipped egg whites into the cottage cheese mixture.
Be careful not to deflate the whites — fold gently with a spatula.
Once mostly combined, gently fold in the fresh blueberries.
Scoop dollops of batter onto the lined baking sheet, spacing apart slightly.
Use the back of the spoon to shape into rounds.
Bake for 25–30 minutes or until lightly golden and set.
Let cool slightly before serving.
Dust with powdered sugar if desired and enjoy the cloud-like magic!
Notes
Use Room-Temperature Eggs: They whip up faster and fluffier.
Dry the Blueberries: After washing, dry them completely to avoid soggy spots.
Don’t Overmix: Gentle folding keeps the batter airy.
Experiment with Flavors: Add a dash of lemon zest for a citrusy twist!
