Description

When warm weather hits or you’re in the mood for something vibrant, refreshing, and satisfying, nothing beats a bowl of Cold Sesame Noodles.


Ingredients

Scale

For the Sauce:

    • ¼ cup tahini (or sesame paste)

    • 2 tablespoons smooth peanut butter

    • 3 tablespoons soy sauce

    • 1 tablespoon rice vinegar

    • 1 tablespoon toasted sesame oil

    • 1 tablespoon maple syrup or honey

    • 2 garlic cloves, grated

    • 12 teaspoons fresh ginger, grated

    • 23 tablespoons warm water, to thin the sauce

    • Optional: ½–1 teaspoon chili crisp or Sriracha for heat

For the Noodles & Toppings:

    • 8 oz (225g) noodles (lo mein, soba, spaghetti, or rice noodles)

    • 1 medium cucumber, julienned or sliced

    • 1 medium carrot, julienned or shredded

    • 2 scallions, sliced

    • 1 tablespoon toasted sesame seeds

    • Chopped cilantro or mint (optional)

    • Chopped peanuts (optional for crunch)

Optional proteins:

    • Tofu, shredded chicken, edamame, or tempeh


Instructions

    1. Cook the noodles
      Bring a pot of salted water to a boil. Cook noodles according to package instructions until al dente. Drain, rinse under cold water, and set aside.

    1. Make the sesame sauce
      In a bowl, whisk together tahini, peanut butter, soy sauce, vinegar, sesame oil, sweetener, garlic, and ginger. Add warm water a little at a time until smooth and pourable.

    1. Toss noodles with sauce
      Add the cooled noodles to the sauce and toss until well coated. Use tongs to ensure every strand is coated.

    1. Add veggies and toppings
      Stir in the cucumbers, carrots, and scallions. Top with sesame seeds, herbs, peanuts, or protein of choice.

    1. Chill or serve immediately
      Serve right away or refrigerate for 1–2 hours to let the flavors meld.

Notes

Rinse noodles in cold water after cooking to stop them from sticking
Toss noodles in a little sesame oil before adding sauce if storing
Thin sauce gradually to avoid watering it down too much
Chill the noodles before serving for best flavor and texture
Dont skip garlic and ginger they provide essential depth
