Instructions

  1. Cream Butter & Sugar: Beat butter and sugar until light and fluffy.
  2. Add Wet Ingredients: Mix in egg and vanilla extract until smooth.
  3. Mix Dry Ingredients: Whisk together flour, espresso powder, baking powder, and salt in another bowl.
  4. Combine: Add dry mix gradually into wet mixture. Add milk if dough is crumbly.
  5. Chill: Wrap dough and refrigerate for 30 minutes.
  6. Shape: Preheat oven to 350°F (175°C). Roll dough into balls, flatten slightly, and place on a lined baking sheet. Roll in sugar if desired.
  7. Bake: Bake 8–10 minutes until edges are set. Cool on pan 5 minutes before transferring to rack.
