- 1 cup granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 2 1/2 cups all-purpose flour
- 2 tablespoons espresso powder (or finely ground instant coffee)
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2–3 tablespoons milk, if dough feels too dry
- Optional: extra sugar or cinnamon sugar for rolling
Instructions
- Cream Butter & Sugar: Beat butter and sugar until light and fluffy.
- Add Wet Ingredients: Mix in egg and vanilla extract until smooth.
- Mix Dry Ingredients: Whisk together flour, espresso powder, baking powder, and salt in another bowl.
- Combine: Add dry mix gradually into wet mixture. Add milk if dough is crumbly.
- Chill: Wrap dough and refrigerate for 30 minutes.
- Shape: Preheat oven to 350°F (175°C). Roll dough into balls, flatten slightly, and place on a lined baking sheet. Roll in sugar if desired.
- Bake: Bake 8–10 minutes until edges are set. Cool on pan 5 minutes before transferring to rack.
Notes
- Use instant espresso for best flavor—dissolves easily and is bold.
- Chill dough to prevent spreading.
- Adjust espresso powder: 1 tbsp for subtle flavor, up to 3 tbsp for strong coffee flavor.
- Avoid brewed coffee—it adds too much liquid.
- Pair with chocolate drizzle or Nutella for extra indulgence.
