Description

This no-bake coconut rum tiramisu combines fluffy mascarpone coconut cream, coffee and coconut rum-soaked ladyfingers, and toasted coconut for a creamy, tropical twist on the classic Italian dessert. Light, elegant, and make-ahead friendly, it’s the perfect summer dessert for parties or a cozy indulgence at home.


Ingredients

For the cream: 16 oz (450 g) mascarpone cheese 1 cup (240 ml) coconut milk, well-shaken 1 cup (120 g) powdered sugar 1 teaspoon vanilla extract 1 cup (240 ml) heavy whipping cream For assembly: 24–30 ladyfinger cookies 1 cup (240 ml) brewed coffee, cooled ½ cup (120 ml) coconut rum ½ cup (40 g) toasted shredded coconut, for garnish Cocoa powder, for dusting Optional: Fresh mint sprigs or tropical fruits like pineapple or mango, for garnish


Instructions

1. In a large mixing bowl, beat mascarpone, coconut milk, powdered sugar, and vanilla until smooth and creamy. 2. In another bowl, whip heavy cream to soft peaks, then fold into mascarpone mixture until fluffy. 3. In a shallow dish, combine cooled coffee and coconut rum. Quickly dip each ladyfinger in the mixture and arrange a layer in the bottom of a 9×13 inch dish. 4. Spread half of the coconut mascarpone cream over the ladyfingers. Repeat with another layer of dipped ladyfingers and the remaining cream. 5. Cover and refrigerate at least 4 hours or overnight. 6. Before serving, dust with cocoa powder and sprinkle toasted coconut on top. Garnish with mint or tropical fruit if desired.

Notes

• Use full-fat canned coconut milk for the richest flavor and texture. • Don’t soak ladyfingers too long or they’ll become mushy. • Chill at least 4 hours (or overnight) for best results. • Store leftovers covered in the refrigerator for up to 3 days.
