Description
If you’re searching for a guilt-free bread alternative that’s as light as air, this Cloud Bread recipe is exactly what you need
Ingredients
- Mixing bowls
- Electric hand mixer or stand mixer
- Silicone spatula
- Baking sheet
- Parchment paper
- Cooling rack
Instructions
Step 1: Prep Your Ingredients
Preheat the oven to 300°F (150°C). Line a baking sheet with parchment paper. Separate the eggs—placing yolks in one bowl and whites in another.
Step 2: Beat the Egg Whites
Using a mixer, beat the egg whites and cream of tartar on high speed until stiff peaks form. This takes about 3–5 minutes. The whites should be glossy and hold their shape.
Step 3: Mix the Yolks and Cream Cheese
In the other bowl, whisk together the egg yolks and cream cheese until smooth. You can also add cinnamon or vanilla here for a sweet version.
Step 4: Fold Gently
Gently fold the yolk mixture into the egg whites using a spatula. Be careful not to deflate the egg whites—fold slowly until combined and no streaks remain.
Step 5: Shape the Bread
Scoop the mixture into 6 equal rounds onto the lined baking sheet. Flatten slightly with the back of a spoon to form disc shapes.
Step 6: Bake
Bake for 25–30 minutes until the tops are golden and slightly firm to the touch. Don’t open the oven while baking, as it can cause deflation.
Step 7: Cool and Enjoy
Let the cloud bread cool on a wire rack. They’ll firm up slightly as they cool and be ready to enjoy in about 10 minutes.
Notes
- Use room temperature eggs for better whipping
- Make sure your bowl and beaters are completely clean and dry—any fat or moisture will prevent proper peaks
- Don’t skip the cream of tartar—it stabilizes the meringue
