Ingredients
Scale
- 1 cup unsalted butter, melted
- 1 cup brown sugar, packed
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg (optional)
Cinnamon Sugar Topping:
- ¼ cup granulated sugar
- 1 tablespoon ground cinnamon
Optional add-ins:
- ½ cup chopped walnuts or chocolate chips
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper or lightly grease it with cooking spray.
- Make the Batter: In a large mixing bowl, whisk together the melted butter and brown sugar until smooth. Add the eggs and vanilla extract, and whisk until fully combined.
- Mix Dry Ingredients: In another bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg. Gradually add the dry ingredients to the wet mixture and stir until just combined.
- Optional Add-ins: If using, fold in chopped walnuts or chocolate chips.
- Spread in the Pan: Spread the batter evenly into the prepared baking pan. Smooth the top with a spatula.
- Make Cinnamon Sugar Topping: In a small bowl, combine the granulated sugar and cinnamon. Sprinkle the cinnamon sugar mixture evenly over the top of the batter.
- Bake: Bake for 25–30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. The edges should be golden and slightly crisp, while the center remains soft and chewy.
- Cool and Serve: Remove from the oven and let cool for about 10 minutes in the pan. Transfer to a cooling rack to cool completely before slicing into squares.
Notes
- Use freshly melted butter for the best texture.
- For a gluten-free version, substitute all-purpose flour with a gluten-free flour blend.
- For extra spice, add a teaspoon of pumpkin pie spice to the batter.
- If you prefer a stronger cinnamon flavor, increase the cinnamon in both the batter and topping.
- For the best texture, ensure that the blondies are slightly underbaked in the center, as they will continue to cook in the pan.
