  • Yield: 24 cookies 1x

Description

Cinnamon Roll Cookies combine the buttery sweetness of sugar cookies with the warm cinnamon swirl of classic cinnamon rolls. Soft, fluffy, and drizzled with vanilla glaze, these cookies are perfect for fall baking, brunch, or gifting. They bring cozy holiday vibes in every bite—no yeast, no waiting, just pure cinnamon comfort!

Ingredients

Scale
  • For the Dough:
  • 3/4 cup (170g) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 1 large egg
  • 2 teaspoons pure vanilla extract
  • 2 1/4 cups (280g) all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • For the Filling:
  • 2 tablespoons (30g) unsalted butter, melted and slightly cooled
  • 1/4 cup (50g) brown sugar
  • 2 teaspoons ground cinnamon
  • For the Glaze:
  • 1 cup (120g) confectioners’ sugar
  • 23 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Make the Dough: Cream butter and sugar until fluffy. Add egg and vanilla, mixing until smooth. In a separate bowl, whisk flour, baking powder, and salt. Combine wet and dry ingredients until a soft dough forms. Chill for 30 minutes if sticky.
  2. Prepare the Filling: Mix melted butter, brown sugar, and cinnamon in a small bowl until smooth.
  3. Roll the Dough: Roll out the dough into a 9×12-inch rectangle. Spread the cinnamon filling evenly, leaving a small border.
  4. Roll and Chill: Roll into a log, wrap in plastic wrap, and chill for at least 2 hours.
  5. Slice and Bake: Preheat oven to 350°F (177°C). Slice the dough into 1/2-inch rounds and bake on lined baking sheets for 10–12 minutes until golden at the edges. Cool completely.
  6. Glaze: Whisk powdered sugar, milk, and vanilla until smooth. Drizzle over cooled cookies for a sweet finish.

Notes

  • Chill the dough thoroughly to prevent spreading.
  • Use room-temperature butter and eggs for the best texture.
  • Don’t overmix—stop once the dough comes together.
  • Remove cookies from the oven when slightly soft in the center—they’ll firm as they cool.
  • Try adding chopped pecans or cream cheese glaze for a delicious twist.
