Instructions

  1. Mix dry ingredients: In a large bowl, whisk together flour, sugar, baking powder, salt, and cinnamon until evenly combined.
  2. Combine wet ingredients: In a separate bowl, beat the egg, then add milk, melted butter, and vanilla extract. Stir well.
  3. Make the batter: Pour the wet ingredients into the dry and gently mix until just combined—don’t overmix; some lumps are okay.
  4. Prepare cinnamon sugar: In a small bowl, combine the sugar and cinnamon for sprinkling.
  5. Heat the pan: Warm a non-stick pan over medium heat and lightly grease with butter.
