Description

Christmas Morning Casserole is a warm, hearty, and festive breakfast bake filled with crispy hash browns, smoky chorizo or sausage, fluffy eggs, and melted cheese. It’s the perfect holiday breakfast that can be made ahead, baked fresh, and served as the family gathers around the tree. Comforting, crowd-pleasing, and customizable — this casserole is a must for your Christmas brunch table.

Ingredients

Scale
  • 1 lb (450g) ground chorizo or breakfast sausage
  • 6 large eggs
  • 1 cup (240ml) milk
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 package (20 oz or 567g) frozen hash browns, thawed
  • 2 cups (200g) shredded cheddar or Monterey Jack cheese
  • 1 small onion, diced (optional)
  • 1 red bell pepper, diced (optional)
  • 1 tablespoon olive oil (for greasing the baking dish)

Instructions

  1. Preheat and Prepare: Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with olive oil.
  2. Cook the Meat: In a skillet over medium heat, cook the ground chorizo or sausage until browned and fully cooked. Drain excess fat and set aside.
  3. Whisk the Eggs: In a mixing bowl, whisk eggs, milk, garlic powder, onion powder, salt, and pepper until smooth.
  4. Assemble: Spread thawed hash browns evenly in the dish. Layer with cooked meat, onions, and peppers. Sprinkle 1½ cups cheese over top. Pour the egg mixture evenly and finish with remaining cheese.
  5. Bake: Bake for 35–40 minutes, or until the center is set and the top is golden brown.
  6. Cool and Serve: Let cool for 5–10 minutes before slicing. Garnish with parsley or green onions for a festive touch.

Notes

  • Make-Ahead Tip: Assemble the casserole the night before and bake it fresh on Christmas morning.
  • Storage: Refrigerate leftovers up to 4 days or freeze individual portions for up to 2 months.
  • Variations: Use turkey sausage, roasted vegetables, or shredded zucchini for lighter versions.
  • Cheese Options: Sharp cheddar adds bold flavor; Monterey Jack makes it creamier.
  • Festive Touch: Use red and green bell peppers for a colorful Christmas look.
