  • 1 tbsp olive oil
  • 1 lb Mexican chorizo sausage
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 (14.5 oz) can diced tomatoes, with juice
  • 1 red bell pepper, diced
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • Salt and black pepper, to taste
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Cook the chorizo: Heat olive oil in a large skillet or pot over medium heat. Add the chorizo and cook until browned, about 5 minutes. Remove excess grease if necessary.
  2. Sauté vegetables: Add onion, garlic, and bell pepper. Cook for 3–4 minutes until softened.
  3. Add rice & spices: Stir in rice, smoked paprika, and cumin. Toast the rice for 1–2 minutes.
  4. Simmer: Pour in chicken broth and diced tomatoes. Season with salt and pepper. Stir well, bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes until rice is tender.
  5. Finish: Remove from heat and let rest, covered, for 5 minutes. Fluff with a fork.
  6. Serve: Garnish with fresh cilantro and lime wedges. Serve hot as a main dish or side.

Notes

  • Use Mexican chorizo (raw, uncooked) for best results — Spanish cured chorizo won’t give the same texture.
  • For extra spice, add jalapeños or chili flakes when sautéing.
  • Make it a full meal by adding corn, black beans, or peas.
  • Pairs well with grilled chicken, shrimp, or on its own.
