  • 2 large eggs
  • 1/2 cup olive oil (or coconut oil)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Pinch of salt
  • 1/2 cup dark chocolate chips (optional)

Instructions

  1. Preheat Oven: Preheat to 350°F (175°C). Grease or line a muffin tin.
  2. Blend Spinach: Blend spinach until smooth. Use fresh or drained frozen spinach.
  3. Mix Dry Ingredients: In a bowl, whisk together flour, cocoa, baking powder, baking soda, and salt.
  4. Mix Wet Ingredients: In another bowl, whisk eggs, honey or syrup, oil, and vanilla. Stir in spinach puree.
  5. Combine: Add wet to dry and stir just until combined. Fold in chocolate chips if using.
  6. Bake: Fill muffin cups 3/4 full. Bake for 18–22 minutes, until a toothpick comes out clean.
  7. Cool: Let cool 5 minutes in pan, then transfer to a wire rack to cool completely.
