  • 1/2 cup fat-free milk
  • 1/2 teaspoon pure vanilla extract
  • 2 ounces dark chocolate (60–70% cocoa), finely chopped
  • 2 large egg yolks
  • 4 large egg whites
  • 1/4 teaspoon cream of tartar
  • Extra sugar for coating ramekins

Instructions

  1. Preheat oven to 375°F (190°C). Butter four 6-ounce ramekins and coat with sugar. Set aside on a baking sheet.
  2. In a small saucepan, whisk cocoa powder, flour, sugar, and salt. Gradually whisk in milk until smooth.
  3. Cook over medium heat, stirring constantly, until thickened. Remove from heat and stir in vanilla and chopped chocolate until smooth. Let cool for 5 minutes.
  4. Stir in the egg yolks to the cooled chocolate mixture.
  5. In a separate bowl, beat egg whites and cream of tartar until stiff peaks form.
  6. Fold egg whites into the chocolate base in three additions, being careful not to deflate the mixture.
  7. Spoon into prepared ramekins and smooth the tops. Run your thumb along the inside edge to help them rise evenly.
  8. Bake for 15–17 minutes until puffed and set on top, but still slightly jiggly in the center.
  9. Serve immediately with optional toppings like powdered sugar or whipped Greek yogurt.
