Description

These **Chocolate Pumpkin Butter Cups** are a cozy fall twist on a classic favorite! Made with rich dark chocolate and a creamy spiced pumpkin filling, they’re gluten-free, dairy-free, and perfectly indulgent without being heavy. Ideal for Halloween, Thanksgiving, or healthy snacking, this treat combines wholesome ingredients with irresistible flavor.

Ingredients

Scale
    • Chocolate Layer:
    • 1 ½ cups dairy-free dark chocolate chips
    • 1 tablespoon coconut oil

  • Pumpkin Butter Filling:
  • ⅓ cup pumpkin puree (not pumpkin pie filling)
  • 2 tablespoons maple syrup or agave
  • 2 tablespoons sunflower seed butter (or almond/cashew butter)
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • Pinch of salt

Instructions

  1. Melt the chocolate: In a microwave or double boiler, melt the chocolate chips and coconut oil until smooth.
  2. Prepare the filling: Mix pumpkin puree, maple syrup, sunflower butter, vanilla, pumpkin spice, and salt in a bowl until creamy.
  3. Layer the base: Spoon 1 teaspoon of melted chocolate into lined muffin cups. Freeze for 10 minutes to set.
  4. Add the pumpkin layer: Place 1 heaping teaspoon of pumpkin filling on top of the chocolate base. Flatten gently.
  5. Top with chocolate: Cover filling with more melted chocolate. Tap pan to smooth tops.
  6. Chill: Freeze for 15–20 minutes until fully set. Serve chilled or at room temperature.

Notes

  • Use 100% pumpkin puree, not pumpkin pie filling.
  • Coconut oil helps chocolate set smoothly—don’t skip it.
  • Sprinkle sea salt or pumpkin seeds on top before chilling for extra flavor and crunch.
  • Keep refrigerated for best texture and freshness.
