Ingredients
- 2 cups pecan halves or chopped pecans (toasted for extra flavor)
- 1 cup caramel candies or homemade caramel bits
- 2 cups semi-sweet or dark chocolate chips (or a mix)
- 2 tablespoons butter
- 1 teaspoon vanilla extract
- Optional: sea salt flakes for sprinkling
Instructions
Preheat oven to 350°F (175°C). Spread pecans on a baking sheet and toast for 8–10 minutes until fragrant. Let cool.
In a microwave-safe bowl, melt caramel candies with butter in 30-second intervals, stirring until smooth. Stir in vanilla extract.
Toss toasted pecans with the melted caramel until evenly coated.
Line an 8×8-inch square pan with parchment paper. Spread the pecan-caramel mixture evenly.
In a separate bowl, melt the chocolate chips in the microwave in 30-second bursts, stirring until smooth.
Spread the melted chocolate over the pecan-caramel layer evenly.
Refrigerate for at least 2 hours until firm. Sprinkle with sea salt flakes if desired before chilling.
Lift the clusters out using parchment overhang and cut into bars or break into clusters.
