Ingredients

  • 1 cup (200g) granulated sugar
  • 1 cup (220g) packed light brown sugar
  • 1 cup (226g) unsalted butter, softened
  • 1 cup (250g) creamy peanut butter
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 cups (250g) all-purpose flour
  • ¾ cup (65g) unsweetened cocoa powder
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • Optional: coarse sea salt for sprinkling

Instructions

  1. Preheat oven: Set your oven to 350°F (175°C) and line baking sheets with parchment or silicone mats.
  2. Cream butter and sugars: In a large bowl, beat together the softened butter, granulated sugar, and brown sugar until light and fluffy—about 2–3 minutes.
  3. Add peanut butter, eggs, and vanilla: Mix in the peanut butter, then beat in eggs one at a time, followed by the vanilla.
  4. Combine dry ingredients: In a separate bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
  5. Mix everything together: Gradually add the dry ingredients to the wet mixture. Stir until just combined—do not overmix.
  6. Scoop and bake: Scoop tablespoon-sized portions of dough onto your prepared baking sheet, spacing them 2 inches apart. Optionally, flatten slightly with a fork in a criss-cross pattern.
  7. Bake: Bake for 9–11 minutes, or until edges are set and centers are still soft.
  8. Cool: Let cookies rest on the sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Use room-temperature ingredients to help your dough mix evenly.
Don’t overbake—remove cookies when the centers still look slightly underdone.
Use natural peanut butter for a more intense nutty flavor or stick with classic for a smooth texture.
If you love a salted peanut cookie, sprinkle sea salt on top just before baking for a bakery-style finish.
To keep cookies soft for days, store them with a slice of bread in the container.
