Instructions

  1. In a large mixing bowl, combine the strawberry cake mix, softened butter, egg, vanilla extract, and flour. Stir until a soft cookie dough forms.
  2. Scoop the dough onto a baking sheet lined with parchment paper. Roll the dough into balls and place them about 2 inches apart on the sheet.
  3. Preheat your oven to 350°F (175°C). Bake the cookies for 8-10 minutes, or until the edges are set but the centers are still soft. Let them cool on the baking sheet for 5 minutes, then transfer to a cooling rack to cool completely.
  4. While the cookies are cooling, prepare the chocolate-covered strawberries. Place the semi-sweet chocolate chips and heavy cream in a microwave-safe bowl. Microwave in 20-second intervals, stirring in between, until the chocolate is fully melted and smooth.
