Instructions
- In a large mixing bowl, combine the strawberry cake mix, softened butter, egg, vanilla extract, and flour. Stir until a soft cookie dough forms.
- Scoop the dough onto a baking sheet lined with parchment paper. Roll the dough into balls and place them about 2 inches apart on the sheet.
- Preheat your oven to 350°F (175°C). Bake the cookies for 8-10 minutes, or until the edges are set but the centers are still soft. Let them cool on the baking sheet for 5 minutes, then transfer to a cooling rack to cool completely.
- While the cookies are cooling, prepare the chocolate-covered strawberries. Place the semi-sweet chocolate chips and heavy cream in a microwave-safe bowl. Microwave in 20-second intervals, stirring in between, until the chocolate is fully melted and smooth.
- Dip each strawberry into the melted chocolate, coating about two-thirds of the strawberry. Let any excess chocolate drip off, then place the strawberries on a parchment-lined tray. Repeat until all strawberries are dipped.
- Once the cookies are completely cooled, place a chocolate-covered strawberry on top of each cookie. You can drizzle any leftover chocolate over the cookies or add sprinkles or colored sugar for extra flair.
