Chocolate Banana Bark

Deliciously Healthy Chocolate Banana Bark : Sweet, Simple & Satisfying

  • Author: Lyndy

Description

Chocolate Peanut Butter Banana Bark is a frozen treat that layers ripe banana slices with rich dark chocolate and creamy peanut butter for a candy-bar vibe made from simple, wholesome ingredients. It’s quick to prep, freezer-friendly, and endlessly customizable with your favorite crunchy toppings.

Ingredients

Scale

For a standard baking sheet Base & Layers:

  • 34 ripe (but firm) bananas, sliced into 1/4-inch rounds
  • 1 1/2 cups dark chocolate chips or chopped dark chocolate
  • 2 tbsp coconut oil, divided
  • 1/2 cup creamy peanut butter

Optional Toppings:

  • Chopped nuts
  • Coconut flakes
  • Chia seeds
  • Freeze-dried fruit

Tools:

  • Baking sheet and parchment paper
  • Microwave-safe bowls or small saucepans
  • Spoon or spatula
  • Freezer-safe container for storage

Instructions

  1. Prepare the base: Line a baking sheet with parchment. Arrange banana slices in a single layer, close together but not overlapping.
  2. Melt the chocolate: In a microwave-safe bowl, melt chocolate with 1 tbsp coconut oil in 30-second bursts, stirring until smooth (or melt gently on the stovetop).
  3. Cover bananas: Pour melted chocolate over the bananas and spread evenly to coat.
  4. Add peanut butter: Melt peanut butter with remaining 1 tbsp coconut oil until smooth; drizzle over the chocolate layer.
  5. Top & freeze: Add desired toppings. Freeze 2–3 hours until completely solid.
  6. Break & store: Break bark into pieces and store in an airtight, freezer-safe container.

Notes

  • Why it’s a healthy sweet: Bananas add natural sweetness and potassium; dark chocolate brings antioxidants; peanut butter adds healthy fats and a bit of protein.
  • Variations: Dairy-free (use DF chocolate + vegan PB); nut-free (swap PB for sunflower seed butter or tahini); low-sugar (use sugar-free chocolate + no-added-sugar PB).
  • Protein boost: Stir 1–2 scoops chocolate or vanilla protein powder into the melted chocolate before spreading.
  • Flavor twists: Tropical (coconut + dried pineapple); Berry blast (freeze-dried strawberries/raspberries); Crunch factor (crushed almonds, walnuts, or pumpkin seeds); try a light cinnamon dusting.
  • Storage & make-ahead: Freeze up to 2 months in an airtight container. For day-of, assemble in the morning; ready by afternoon. Refrigerate only if eating within 24 hours (bananas may brown).
  • Common mistakes: Over-melting chocolate (can seize); using overripe bananas (mushy texture); uneven layers (spread chocolate evenly).
  • Serving ideas: Enjoy straight from the freezer for a crisp bite, or thaw 2–3 minutes for a softer, candy-bar-like texture; pair with a smoothie bowl for a breakfast-dessert combo.

FAQs:
Without peanut butter? Skip it or use almond/sunflower seed butter.
Milk chocolate? Yes, sweeter and lower in antioxidants than dark.
Freezer life? Up to 2 months in an airtight container.
