  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Juice of ½ lime
  • For the Pineapple Salsa:
  • 1 cup diced fresh pineapple
  • ½ small red onion, finely diced
  • 1 small jalapeño, seeded and minced
  • 2 tablespoons chopped fresh cilantro
  • Juice of ½ lime
  • Pinch of salt
  • For the Taco Sauce:
  • ⅓ cup Greek yogurt or sour cream
  • 1 tablespoon adobo sauce
  • ½ teaspoon garlic powder
  • Juice of ½ lime
  • Salt to taste
  • To Serve:
  • 8 small corn tortillas
  • 1 cup shredded cabbage or slaw mix
  • Lime wedges
  • Optional: sliced avocado or cotija cheese

Instructions

  1. Preheat Oven: Preheat to 425°F (220°C) and line a baking sheet with parchment paper. Place salmon skin-side down.
  2. Prepare Glaze: Mix olive oil, honey, adobo sauce, cumin, paprika, lime juice, salt, and pepper. Brush over salmon.
  3. Roast Salmon: Bake for 12–15 minutes, broil last 1–2 minutes for crispiness.
  4. Make Salsa: Combine pineapple, onion, jalapeño, cilantro, lime juice, and salt in a bowl. Mix and set aside.
  5. Make Sauce: Whisk yogurt or sour cream with adobo, lime juice, garlic powder, and salt.
  6. Warm Tortillas: Toast in skillet or over flame for 30 seconds each side.
  7. Assemble Tacos: Flake salmon and layer with slaw, salsa, and sauce on tortillas. Add optional toppings and serve.
