- 2 tablespoons olive oil
- 2 tablespoons honey
- 1–2 tablespoons adobo sauce (from canned chipotle peppers)

- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Juice of ½ lime
- For the Pineapple Salsa:
- 1 cup diced fresh pineapple
- ½ small red onion, finely diced
- 1 small jalapeño, seeded and minced
- 2 tablespoons chopped fresh cilantro
- Juice of ½ lime
- Pinch of salt
- For the Taco Sauce:
- ⅓ cup Greek yogurt or sour cream
- 1 tablespoon adobo sauce
- ½ teaspoon garlic powder
- Juice of ½ lime
- Salt to taste
- To Serve:
- 8 small corn tortillas
- 1 cup shredded cabbage or slaw mix
- Lime wedges
- Optional: sliced avocado or cotija cheese
Instructions
- Preheat Oven: Preheat to 425°F (220°C) and line a baking sheet with parchment paper. Place salmon skin-side down.
- Prepare Glaze: Mix olive oil, honey, adobo sauce, cumin, paprika, lime juice, salt, and pepper. Brush over salmon.
- Roast Salmon: Bake for 12–15 minutes, broil last 1–2 minutes for crispiness.
- Make Salsa: Combine pineapple, onion, jalapeño, cilantro, lime juice, and salt in a bowl. Mix and set aside.
- Make Sauce: Whisk yogurt or sour cream with adobo, lime juice, garlic powder, and salt.
- Warm Tortillas: Toast in skillet or over flame for 30 seconds each side.
- Assemble Tacos: Flake salmon and layer with slaw, salsa, and sauce on tortillas. Add optional toppings and serve.

- Use mango or grilled peaches instead of pineapple if preferred.
