  • 3 cups (450g) cold, day-old jasmine rice
  • 2 cups (300g) cooked chicken breast or thigh, diced
  • 2 tablespoons vegetable oil
  • 2 large eggs, beaten
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1 cup (150g) frozen peas and carrots
  • 3 tablespoons light soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 2 green onions, sliced
  • Salt and white pepper, to taste

Instructions

  1. Prep Ingredients: Dice chicken, chop onions, mince garlic, and slice green onions. Keep all ingredients ready.
  2. Scramble Eggs: Heat 1 tsp oil in a wok, add beaten eggs, scramble until set, then remove.
  3. Cook Aromatics: Add oil, sauté onions and garlic until fragrant.
  4. Stir-Fry Chicken: Add cooked chicken pieces and stir until heated through.
  5. Add Vegetables: Stir in peas and carrots, cooking until tender.
  6. Fry Rice: Break up cold rice, add to wok, and stir-fry until heated and coated.
  7. Season: Pour in soy sauce, oyster sauce, and sesame oil. Toss everything together.
  8. Finish: Add scrambled eggs back along with green onions. Stir, taste, and adjust seasoning. Serve hot.
