  • 1 (15-ounce) can chickpeas (garbanzo beans), drained and rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cumin
  • Zest of 1 lime
  • Juice of 1/2 lime
  • Salt and pepper, to taste

Instructions

1. Preheat your oven
Set the oven to 400°F (200°C) and line a baking sheet with parchment paper or foil.

2. Rinse and dry the chickpeas
Drain and rinse the chickpeas thoroughly. Then, pat them completely dry with a clean towel or paper towel. The drier they are, the crispier they’ll get.

3. Toss with oil and spices
In a bowl, combine chickpeas with olive oil, chili powder, garlic powder, cumin, lime zest, and lime juice. Toss until evenly coated. Add salt and pepper to taste.

4. Spread on a baking sheet
Arrange the chickpeas in a single layer on the baking sheet, spacing them out to allow for even roasting.

5. Roast to crispy perfection
Bake for 30–40 minutes, stirring halfway through. Keep an eye on them after 30 minutes to prevent burning.

6. Let cool
Cool completely on the pan. They’ll continue to crisp up as they cool.

7. Store or serve
Enjoy right away or store in an airtight container at room temperature for up to 4 days.

Notes

  • Dry chickpeas in advance — Air-dry for 30 minutes before baking if possible.

  • Use a salad spinner — Quick way to dry chickpeas after rinsing.

  • Double the batch — They disappear fast!

  • Make a spice mix ahead of time — Saves effort for future batches.

 

  • Use foil for easy cleanup — Especially if your seasoning mix includes lime juice.
