  • 1/2 cup granulated sugar
  • 1 large egg yolk
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 cup almond flour or finely ground pecans
  • 1/4 tsp salt
  • Raspberry jam (or preferred jam)
  • Powdered sugar, for dusting

Instructions

  1. Make the Dough: Cream butter and sugar until light and fluffy. Beat in egg yolk and vanilla. Add flour, ground nuts, and salt. Mix until a soft dough forms. Divide into two disks and chill for at least 1 hour.
  2. Roll and Cut: Preheat oven to 350°F (175°C). Roll dough to 1/8-inch thickness. Cut out an even number of cookies—half with center cut-outs.
  3. Bake: Arrange on parchment-lined baking sheets. Bake 8–10 minutes until edges lightly golden. Cool completely.
  4. Fill: Spread jam on bottom cookies. Top with cut-out cookies to form sandwiches.
  5. Finish: Dust with powdered sugar before serving.
