Ingredients

Scale

For the Burger Patties:

  • 1 pound ground chicken
  • 1 medium zucchini, grated and squeezed dry
  • ½ cup fresh corn kernels (or frozen, thawed)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • ½ cup breadcrumbs (or almond flour for a gluten-free option)
  • 1 egg, lightly beaten
  • 2 tablespoons olive oil (for cooking)

For Serving (Optional):

  • Burger buns or lettuce wraps (for a low-carb option)
  • Sliced avocado or tomatoes
  • Tzatziki or Greek yogurt sauce
  • Crumbled feta cheese (for a Mediterranean twist)

Instructions

Step 1: Prepare the Zucchini and Corn

  1. Grate the zucchini and squeeze out excess moisture using a clean kitchen towel or paper towels. This helps prevent the burgers from becoming soggy.
  2. If using fresh corn, cut the kernels off the cob. If using frozen corn, thaw and drain any excess liquid.

Step 2: Mix and Form the Burger Patties

  1. In a large bowl, combine ground chicken, zucchini, corn, onion, garlic, salt, pepper, paprika, oregano, breadcrumbs (or almond flour), and egg.
  2. Mix gently until well combined.
  3. Form the mixture into 4 large patties or 6-8 mini zucchini burgers.

Step 3: Cook the Burgers

Stovetop Method:

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  2. Cook the patties for 4-5 minutes per side, or until golden brown and cooked through (internal temperature of 165°F/75°C).

Grill Method:

  1. Preheat the grill to medium-high heat.
  2. Lightly oil the grates and grill the patties for 4-5 minutes per side.

Step 4: Serve and Enjoy!

  1. Serve the burgers on buns, lettuce wraps, or as a protein-packed meal with a side salad.
  2. Add toppings like avocado, tomato slices, and a drizzle of tzatziki or yogurt sauce.

Notes

✔️ Squeeze out excess moisture from zucchini to prevent soggy patties.
✔️ Chill the patties for 10 minutes before cooking for better texture.
✔️ Use a meat thermometer to ensure they reach 165°F internally.
