 - 1 tablespoon fresh dill or mint, chopped
 - ½ teaspoon salt
 - ½ teaspoon black pepper
 
For the Bowls:
- 2 cups cooked white or brown rice (or quinoa for a low-carb option)
 - 1 cup cherry tomatoes, halved
 - 1 cup cucumber, diced
 - ½ cup red onion, thinly sliced
 - ½ cup feta cheese, crumbled
 - ¼ cup Kalamata olives, pitted and sliced (optional)
 - Warm pita bread or naan (optional)
 
Instructions
Step 1: Marinate the Chicken
- In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
 - Add the chicken and coat evenly. Cover and let marinate in the refrigerator for at least 30 minutes (or up to 8 hours for deeper flavor).
 
Step 2: Make the Tzatziki Sauce
- Grate the cucumber and squeeze out excess water using a paper towel or cheesecloth.
 - In a bowl, mix Greek yogurt, cucumber, lemon juice, garlic, fresh dill (or mint), salt, and pepper.
 - Cover and refrigerate for at least 30 minutes to let the flavors meld.
 
Step 3: Cook the Chicken
- Heat a grill pan, skillet, or outdoor grill over medium-high heat.
 - Cook the chicken for 5-7 minutes per side until golden brown and fully cooked (internal temperature of 165°F/75°C).
 - Let rest for 5 minutes, then slice into strips.
 
Step 4: Assemble the Bowls
- Divide the cooked rice (or quinoa) into serving bowls.
 - Arrange the grilled chicken, cherry tomatoes, cucumber, red onion, feta cheese, and olives on top.
 - Drizzle with tzatziki sauce and serve with warm pita bread or naan if desired.
