Description

This Keto Crack Chicken Soup is creamy, cheesy, and comforting while staying low-carb and keto-friendly. Made with shredded chicken, cream cheese, cheddar, heavy cream, and crispy bacon, it’s a hearty, protein-packed soup that’s perfect for busy nights, meal prep, or cozy weekends. Add broccoli, cauliflower, or ranch seasoning for endless variations!

Ingredients

Scale
  • 2 tablespoons butter
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 6 cups chicken broth (low-sodium)
  • 2 cups shredded cooked chicken (rotisserie or leftover)
  • 1 cup heavy cream
  • 8 ounces cream cheese, softened
  • 2 cups shredded cheddar cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt (adjust to taste)
  • ½ cup cooked, crumbled bacon
  • 2 tablespoons chopped green onions, for garnish
  • Optional Add-ins: 1 cup broccoli or cauliflower florets, 1 teaspoon hot sauce, 2 tablespoons ranch seasoning

Instructions

  1. Slow Cooker Method: In a skillet, melt butter and sauté onion and garlic. Add to slow cooker with broth, cream cheese, heavy cream, and spices. Cook on low 4–6 hours or high 2–3 hours. Stir in chicken and cheddar during last 30 minutes. Top with bacon and green onions before serving.
  2. Stovetop Method: In a large pot, melt butter and sauté onion and garlic. Add broth, cream cheese, heavy cream, and spices. Stir until smooth. Add chicken and cheddar, simmer gently until thickened. Garnish with bacon and green onions.

Notes

  • Use softened cream cheese for smooth blending.
  • Add cheese gradually and stir over low heat to prevent clumping or curdling.
  • Don’t boil after adding dairy—keep heat low.
  • Adjust spices to taste; paprika adds warmth, ranch seasoning adds depth.
  • Freeze in portions for up to 3 months; reheat gently with extra cream if needed.
