Irresistibly Easy Chicken Sausage White Bean Skillet : A Power-Packed One-Pan Meal

  • Author: Lyndy

Description

A hearty, wholesome, and flavor-packed one-pan meal made with chicken sausage, white beans, spinach, tomatoes, and simple pantry spices. Ready in under 30 minutes, naturally gluten-free, budget-friendly, and perfect for busy weeknights or meal prep.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 12 ounces chicken sausage, sliced into ¼-inch rounds
  • 1 yellow onion, diced
  • 2 cloves garlic, minced
  • 1 (15 oz) can cannellini beans, drained and rinsed
  • 1 pint grape tomatoes, halved
  • ¼ teaspoon crushed red pepper (optional)
  • 1/8 teaspoon freshly cracked black pepper
  • 4 cups fresh spinach
  • Salt, to taste

Instructions

  1. Prep the ingredients: Slice chicken sausage, dice onion, mince garlic, halve tomatoes, and rinse the cannellini beans.
  2. Sauté the chicken sausage: Heat olive oil in a large skillet over medium heat. Add sausage and cook until browned on both sides, about 5–6 minutes. Remove and set aside.
  3. Cook the onions and garlic: In the same pan, add diced onion and sauté for 2–3 minutes. Add garlic and cook for 30 seconds.
  4. Add tomatoes and seasoning: Add halved tomatoes, crushed red pepper, and black pepper. Cook for 4–5 minutes until tomatoes soften.
  5. Add the beans and sausage: Return sausage to the skillet and add rinsed white beans. Stir and cook for 3–4 minutes.
  6. Wilt the spinach: Add fresh spinach and gently stir until wilted, about 1–2 minutes. Taste and adjust salt as needed.

Notes

  • Use flavorful chicken sausages like garlic herb or spicy Italian for extra depth.
  • Don’t overcook the beans—stir gently to keep them creamy.
  • Cook tomatoes long enough to create a saucy base.
  • Add spinach at the very end to preserve color and nutrients.
  • Try variations like navy beans, kale, chickpeas, or plant-based sausage.
