Ingredients
Main Ingredients:
- 2 cups cooked chicken, shredded or diced (grilled, rotisserie, or leftover)
- 2 ripe avocados, diced
- 1 cup shredded lettuce
- 1 cup shredded cheese (cheddar or Mexican blend)
- ½ cup ranch dressing (use dairy-free if needed)
- 4 large burrito-size tortillas
- Salt and pepper, to taste
- Olive oil or cooking spray for grilling

- Diced tomatoes or pico de gallo
- Sliced red onion
- Cooked rice or quinoa
- Black beans or corn
- Fresh cilantro
Instructions
In a mixing bowl, combine the shredded chicken, avocado, shredded cheese, and ranch dressing. Gently stir until everything is evenly coated. Season with salt and pepper.
Heat each tortilla in a skillet or microwave for a few seconds to make them pliable and easier to roll.
Lay out the tortillas and layer with a scoop of the chicken avocado mixture, followed by lettuce and any other add-ins you like. Fold in the sides and roll tightly.
Heat a skillet over medium heat and brush lightly with olive oil or use non-stick spray. Place the burritos seam-side down and grill for 2–3 minutes per side, until golden and crispy.
