Ingredients
4 chicken apple sausages (about 12 oz / 340 g) 2 medium sweet potatoes, diced 2 cups (300 g) Brussels sprouts, halved 1 large red onion, cut into wedges 1 red bell pepper, sliced 2 tablespoons olive oil 1 teaspoon garlic powder 1 teaspoon smoked paprika 1/2 teaspoon dried thyme Salt and pepper to taste Fresh parsley, chopped (optional, for garnish)
Instructions
1. Preheat oven to 425°F (220°C) and line a sheet pan with parchment paper if desired. 2. Wash, peel (if needed), and cut vegetables into even pieces. Slice chicken apple sausages into 1-inch rounds. 3. In a large bowl, toss sweet potatoes, Brussels sprouts, onion, and bell pepper with olive oil, garlic powder, smoked paprika, thyme, salt, and pepper. 4. Spread vegetables evenly on the sheet pan and nestle sausage pieces among them. 5. Roast for 25–30 minutes, stirring halfway, until vegetables are tender and caramelized and sausage is heated through. 6. Garnish with chopped parsley and serve hot.
