If you love traditional rice krispie treats but crave something a little more exciting, these Cherry Rice Krispie Treats are sure to satisfy.

- 6 cups Rice Krispies cereal
- 4 cups mini marshmallows
- 3 tbsp unsalted butter
- 1 cup dried cherries (or fresh, chopped)
- 1 cup semi-sweet chocolate chips or chopped chocolate
- Optional: ½ cup chopped nuts (almonds or pecans)
Instructions
- Melt butter and marshmallows: In a large saucepan, melt butter over low heat. Add marshmallows and stir continuously until completely melted and smooth.
- Add cherries and cereal: Remove from heat and quickly stir in dried cherries and Rice Krispies cereal until evenly coated.
- Press into dish: Pour mixture into the prepared baking dish. Using a greased spatula or wax paper, press evenly to compact the treats.
- Add chocolate topping: Melt chocolate chips in a microwave-safe bowl in 30-second intervals, stirring between, until smooth. Drizzle or spread melted chocolate over the top.
- Chill and set: Refrigerate for at least 30 minutes to set the chocolate and firm up the treats before cutting.
Notes
Use mini marshmallows for a smoother melt and better coating. Stir the cherries in quickly to prevent marshmallows from setting too fast. Grease your spatula or hands to press treats without sticking. For a shiny chocolate finish, temper the chocolate or add a teaspoon of coconut oil when melting. Experiment with cherry varieties—dried tart cherries offer a tangy contrast, while sweet cherries add subtle sweetness.
