Description
If you love the sweet-tart flavor of cherries paired with the buttery richness of a crumb topping, you’re going to adore these Cherry Cobbler Muffins.
Ingredients
For the Muffins:
- 1 ½ cups all-purpose flour
- ½ cup granulated sugar
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup unsalted butter, melted and slightly cooled
- ¾ cup buttermilk
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup chopped cherries (fresh or frozen)
For the Crumb Topping:
- ¼ cup all-purpose flour
- ¼ cup brown sugar
- 2 tablespoons unsalted butter, cold and cubed
Instructions
Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease with cooking spray.
In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In a separate bowl, mix the melted butter, buttermilk, egg, and vanilla extract until smooth.
Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix—this can make the muffins tough.
Fold the chopped cherries into the batter using a spatula. If using frozen cherries, make sure they are not overly wet; pat them dry with paper towels before folding them in.
Scoop the batter into the prepared muffin cups, filling each about ¾ full.
In a small bowl, combine the flour and brown sugar. Add in the cold, cubed butter and use a fork or your fingers to work the mixture into coarse crumbs.
Sprinkle the crumb topping generously over each muffin.
Bake for 18–22 minutes, or until a toothpick inserted into the center of a muffin comes out clean or with a few moist crumbs. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- Fresh cherries: Ideal in summer; pit and chop before adding.
- Frozen cherries: Work beautifully year-round; thaw and dry to avoid excess moisture.
- Canned cherries: Choose unsweetened or lightly sweetened varieties and drain well.
