  • ¾ cup buttermilk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chopped cherries (fresh or frozen)

For the Crumb Topping:

  • ¼ cup all-purpose flour
  • ¼ cup brown sugar
  • 2 tablespoons unsalted butter, cold and cubed

Instructions

Step 1: Prepare the Muffin Batter

Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease with cooking spray.

In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In a separate bowl, mix the melted butter, buttermilk, egg, and vanilla extract until smooth.

Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix—this can make the muffins tough.

Step 2: Add the Cherries

Fold the chopped cherries into the batter using a spatula. If using frozen cherries, make sure they are not overly wet; pat them dry with paper towels before folding them in.

Step 3: Fill the Muffin Tin

Scoop the batter into the prepared muffin cups, filling each about ¾ full.

Step 4: Make the Crumb Topping

In a small bowl, combine the flour and brown sugar. Add in the cold, cubed butter and use a fork or your fingers to work the mixture into coarse crumbs.

Sprinkle the crumb topping generously over each muffin.

Step 5: Bake

Bake for 18–22 minutes, or until a toothpick inserted into the center of a muffin comes out clean or with a few moist crumbs. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
