Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Place shredded zucchini in a bowl, sprinkle with salt, and let sit for 10–15 minutes. Squeeze out as much liquid as possible using a towel.
- In a mixing bowl, combine zucchini, egg, mozzarella, Parmesan, Italian seasoning, and garlic powder.
- Press mixture onto prepared baking sheet into a rectangle about ¼-inch thick.
- Bake for 20–25 minutes, until golden and set.
- Top with extra mozzarella and broil for 1–2 minutes until bubbly.
- Cool slightly, slice into breadsticks, garnish if desired, and serve.
